east coast flounder with langoustine, black truffle cauliflower puree, romanesco ($15 supplement)
Cow Cow and I went to this beautiful establishment in the financial district back in January, and I gotta say, it’s probably one of the best meals we’ve had in New York. The restaurant’s website may seem a little dated, however this is a Michelin 2-star restaurant that offers a lot of creativity and balanced flavors by head chef Shaun Hergatt and pastry chef Jennifer Yee.
amuse bouche – coconut cream with carrot paper, truffle mousse with coffee grounds
amuse – squid ink breadcrumbs with truffle cream
very dense bread, almost sour-dough like texture
butter trio – truffle, normal, herb (sage perhaps)
The restaurant only offers set menus. Tonight we each got the $85 5-course menu. Each course can be chosen from 3 to 4 different dishes, some with a $10 to $15 supplement depending on the ingredients.
1st course – Hudson Valley foie gras sandwich, pain d’epice wafers, banyuls reduction, sicillian pistachios ($10 supplement)
1st course – salt-pressed petuna ocean trout, compressed nashi pear, kalamansi, petite mustard
2nd course – we both got the fennel pollen dusted lamb sweetbreads, young fennel saffron relish, pearl onions, capers, lemon zest

3rd course – day boat hatham cod, carrot cardamon, Santa Barbara sea urchin, citrus emulsion

4th course – upstate New York guinea hen, caramelized salsify, quinoa, garlic cream, rillette
4th course – three day beef cheek, baby leek, potato parchment, perigourdine sauce
dessert – caramelia custard, buttermilk sorbet, bitter chocolate tuile
dessert – satur farms candied yam, candied maple mallow, cranberry, burnt milk
their wine was superb and complimented every dish perfectly. we were able to share the $75 pairing.
